Ingredients for Muffins
- 6 Eggs (beaten)
- 1 Teaspoon of Vanilla Extract
- 2 Tablespoons of Coconut Sugar
- 1 Teaspoon of Baking Powder
- 2 Teaspoons of Ceylon Cinnamon
- 1 Teaspoon of Himalayan Sea Salt
- ¼ Cup of Mucuna Extract
- 1 Cup of Homemade Applesauce (check below for recipe) or Plain grass-fed Yogurt
Method for Homemade Apple Sauce
Chop two small, peeled organic Gala apples. Boil a cup of water with a teaspoon of salt. Once water has come to a boil, add chopped apples and a teaspoon of butter. Turn heat to medium-low and let simmer for 20 minutes, or until apples are tender. Add a teaspoon of cinnamon to the mixture and mash with a fork until smooth. You can also add it to a food processor.
Method for Muffins
- Preheat oven to 365 degrees Fahrenheit
- Mix all wet ingredients and all dry ingredients in separate bowls
- Combine wet and dry ingredients
- Let batter sit for 5 minutes and then scoop into a muffin tin
- Bake for 35-40 minutes
Ingredients for Compote
- 2 Organic Gala Apples (peeled)
- ¼ Cup of Water
- 2 Teaspoons of Cinnamon
- 2 Tablespoons of Grass-fed Butter
- 1 Teaspoon of Ground Ginger
Method for Compote
- Thinly slice two Gala apples (peeled)
- On medium heat, melt butter in a pan and add water
- Add apples and cover pan for ten minutes on medium-low heat
- Stir apples
- Add cinnamon and ginger
- When apples are tender, remove from heat
Use this compote to put on top of the muffins.
